Christmas turkey & apple waldorf platter


Serves 4


250g left over turkey
50g walnuts, toasted
2 green apples, sliced into thin wafers
1 stick of celery, thinly sliced
2 spring onions, thinly sliced
50g dried cranberries
Handful of watercress
3 tbsp good quality shop-bought mayonnaise
1 clove of garlic, finely chopped
Juice of half a lemon
Sea salt and pepper
1 tbsp natural yoghurt
50g cashel blue cheese, crumbled


Start by toasting the walnuts

Add the mayonnaise into a small bowl with some garlic, add dijon mustard, yoghurt, lemon juice, and some blue cheese

For the salad – chop up celery, spring onions

Put them in a bowl and mix in your dressing

Lay the turkey slices on the bottom of a large platter, tumble the salad in the centre, top with the cranberries, walnuts, thinly sliced apple, dressing and the remaining blue cheese. Garnish with the watercress.
