Braised beef short ribs in tomato & chilli sauce

Shopping list
12 beef short ribs
1 tin kidney beans
2 tins chopped tomatoes
2 onions, diced
3 cloves garlic, chopped
1 tsp cumin
1 tsp chilli powder
1 tsp smoked paprika
1 tsp turmeric
1 tsp cocoa powder
1 tsp salt
½ tsp ground white pepper
2 peppers, diced

Pre-heat oven to 160˚c/gm3

Mix the dry ingredients to form a
Spice rub. Marinade ribs in the rub for 3 hours. Roast ribs with a splash of olive oil for 20 minutes in a large ovenproof tin/dish.

In a saucepan, sweat the onions and garlic for 5 minutes until soft then add the chopped tomatoes and 2 cans of water. Pour the sauce over the ribs and cover with baking paper and foil and return to oven for 6 hours.

Add the kidney beans and diced peppers 20 minutes from the end of the cooking time.

Serve with rice or mash and green vegetables.
