BEEF GOULASH

Nice hearty winter dish served with creamy mash and green vegetables.

Serves 6

1kg braising steak

1 tbsp oil

3 medium onions, each cut into 4 wedges

3 cloves garlic, crushed

2 tsp Hot smoked Paprika (just smoked paprika is fine if you don’t have hot)

1 tbsp Paprika

1 beef stock cube (oxo)

600ml cold water

400g can of chopped tomatoes

2 tbsp Tomato puree

2 bay leaves

1 red pepper – cut into chunks

1 orange pepper – cut into chunks

Flaked sea salt

Ground black pepper

Braise the beef in a pan with the oil until meat browned.  Add the onions and cook for 5 minutes until softened.  Add crushed garlic and cook for further minute, stirring regularly.

Sprinkle over both paprikas, bay leaf and crumble in beef stock cube.  Add the water, tomatoes, tomato puree and bay leaves.  Season with salt and pepper, stir well and bring to a simmer.

Transfer to a slow cooker and cook on low for 6 hours until meat tender.  An hour before end add the peppers.
